May 25--Here are the results of food safety inspections in Lehigh and Northampton counties for the week of May 13-19.

The inspections listed here are those that fall under the jurisdiction of the Pennsylvania Department of Agriculture, as well as those county and local health departments that have elected to post results in the department's statewide inspection database.

-Observed boxes of beef stored directly on the floor in the downstairs walk in freezer, rather than 6 inches off of the floor as required.

-Cups of Rosenberger half and half, clearly marked keep refrigerated were observed being stored with a temperature of 68.2 F at the front counter, rather than 41°F or below as required. Corrected onsite.

-Food Employee was eating in dish washing area as evidenced by observed partially consumed food on a table in this area. Correct practice immediately.

-Food Employee did not follow proper hand washing procedure. Food employee did not wash hands for adequate amount of time, at least 20 seconds and washed her hands in the three compartment sink. Correct this practice immediately.

-The Person in Charge did not demonstrate adequate knowledge of the PA Food Code as evidenced by incorrect responses to food safety questions.

-Meatballs were held at 93-105°F, in a steam table, rather than 135°F or above as required. Reheat the meatballs to 165F immediately and hot hold them at the proper temperature.

-Cut vegetables were held at 44-50°F, on a refrigerated cold bar, rather than 41°F or below as required. Food was placed into the unit before it was allowed to get cold. Correct this practice immediately.

-The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.

-Food was held at 47-49°F, in the kitchen refrigerator, rather than 41°F or below as required. Discard all food stored in this refrigerator.
